Suzie Homemaker...

You guys are superwomen! I read so many of your blogs and you have super busy lives and super busy kiddos and you still manage to build sandcastles, fly kites and I'm guessing you feed them because they're still growing!

We've had a really busy spring and it is catching up with me. Every night after work we have a scheduled event (except for Wednesdays) and it's been making it very hard to schedule my meals. I normally go to the store on Sundays right after church and get everything for my meals for the week and then it makes it easy to get home from work, get something together for dinner since it's pre-planned and be done with it. But the last few weeks when I've been going through the store I have just been totally blank on what to make for dinner! I'm out of ideas. I'm starting to recycle tacos, spaghetti and pizza like it's my job. So I'm doing a random McLinky day! Go through your blog archive and link up to a recipe (preferably EASY, but beggars can't be choosers...) to share with all of us. I'll start by letting you know that I've finally started tagging my old posts! You'll notice it on the right. So just click the recipe tab and hopefully you'll find some new ideas for this week.

Here is what we're having this week, and hopefully next week I can shake it up with some of your favorites!

Sunday- Brisket Tacos
Monday- Chili
Tuesday- Dave's having left over brisket tacos. I'm eating out before the baseball game
Wednesday- Barbecued pork chops
Thursday- Pizza and salad
Friday- Dinner Club! Alice and Jeff are hosting and they are doing surf 'n Turf and martinis! YUM!

I'm cheating and leaving an easy one here b/c it's the only recipe I've ever posted and I did a HORRIBLE job at including the info and you'd prolbably just look at it and be like, "I'm supposed to eat that?". Here's a super easy, super yummy recipe for you! It's kind of boy food but Larry LOVES IT so I'm sure Dave will, too. And it's great b/c it's a 1-dish meal.

EASY CHICKEN POT PIE

Yields 6 servings (so says the recipe. We've gotten about 8.)

Ingredients:
1 small onion, finely chopped
2 stalks of celery, finely chopped
2 medium carrots, peeled & diced
1 medium potato, peeled & diced (small- you don't want to choke yourself when eating)
1 can (or 2 cups) chicken broth (I use low sodium organic, but whatevs)
1 can (10 oz) cream of chicken soup
1 can green peas, drained
2 cups diced cooked chicken (I like to use leftover rotisserie chicken when we buy it for other stuff- adds extra flavor)
1 pkg refridgerated pie crusts (2/pkg)

Preheat your oven to 350 F. Saute onions, celery, & carrots in butter until crisp-tender (about 5 min). Add potatoes & chicken broth. Cook over medium heat until broth is reduced by half. Stir in peas, & chicken. Line a 9" pie pan (it looks extra cute in Emile Henry ones, and they are also really good b/c they're a tad deeper than my Pyrex pie plates) with one pie crust; pour in filling. Top with remaining pie crust. Seal the 2 pie crust edges together by pinching them w/ your fingers.Cut several vents in the top of the crust to allow steam to escape. Bake 30-45 min or until golden brown & filling is bubbly.
